Honduras

El Izote

Grown by Anastacio Benitez at Finca El Izote, in the municipality of San Sebastián in the department of Lempira, between 1,300 and 1,500 metres. Pacas and Catuai, washed.

Washed processing is what gives this cup its smooth edge. Rather than fruit-forward character you get: chocolate, caramel, and enough acidity to be lively instead of sharp.

La Familia Madrid

A washed coffee from Finca La Peña, grown by the Madrid family in Santa Bárbara at 1,600 metres — Pacas and Parainema.

Santa Bárbara has a reputation for sweetness and clarity, and the cup notes indicate the same: honey, cane sugar, and vanilla.
